Food & Drink Award – SABA, Dublin
SABA is a Thai and Vietnamese eatery which is based in Dublin’s city centre. Established in September 2006, SABA means “happy meeting place” in Thai. In 2008, the company opened a dedicated takeaway, home delivery and wine store called SABA To Go in Rathmines. In 2011, the company purchased a catering trailer, the SABA-Dilla, which serves food at music festivals throughout the country. SABA continuously sources new ingredients for its restaurant and takes away and imports all its herbs and dry produce directly from Thailand. It also uses Irish produce like Goatsbridge Smoked Trout, Clare Island Organic Salmon, Irish Hereford Fillet and Sirloin Beef. SABA also runs cookery courses and has published its own cookbook with all proceeds going to charity.
